Me too! Forget the Salt & Vinegar chips, and try this yummy clean eating treat
Garlic Parmesan Roasted Chickpeas:
- 2 151/2 oz chickpeas, drained and rinsed
- 1 Tbsp olive oil
- 1 Tsp minced garlic
- 1/2 Tsp sea salt
- Fresh ground pepper, to taste
- 1/2 cup grated Parmesan cheese
ONE: Spread chickpeas on several layers of paper towels and let dry for 30 minutes
TWO: Pre-heat oven to 400 degrees. In a medium bowl, combine oil, garlic, salt & pepper. Add cheese & stir until crumbly & oil is absorbed. Add chickpeas & toss to coat.
THREE: Spread on a baking sheet & bake for 45-50 minutes, until golden & crispy.
